A Simple Chewy Banana Oatmeal Cookies Recipe

I had a lone banana on the table, getting browner and less edible (to me) by the day, so I decided to make some tasty banana oatmeal cookies with it, before the banana was too past it to use.

They were so tasty, I had to share them with you. They also make a great baking activity for little ones, who will enjoy sticking their hands into the mixture for you, I’m sure!

Ingredients You’ll Need

Butter

I prefer to use salted butter, but you can use whichever you have in your fridge. It will need to be melted. 

Sugar

My go to is dark brown sugar for these banana oatmeal cookies.

Banana

The browner the better, as they’re the sweetest bananas.

Egg Yolk

Separate the yolk from the white and store the white in the fridge for future use.

Oats

I used larger whole oats, the ones I use for my porridge, as they have more bite and substance.

Specific Ingredient Amounts
  • 2 tablespoons butter
  • 2 tablespoons dark brown sugar
  • 1 banana, mashed thoroughly
  • 1 egg yolk
  • 1 cup / 90g whole oats
Substitutions To Consider

Egg: If you’d prefer to leave the egg out you can do so, it will make for a less soft and slightly crispier cookie instead.

Sugar: You can use honey or syrup instead for an even softer banana oatmeal cookie.

Oats: If you wanted a less oaty banana oatmeal cookie, you could split the quantity in half and use a half-half flour and oat mixture. This will result in a slightly more ‘cakey’ oatmeal cookie.

Making The Banana Oatmeal Cookies

Let’s make this delicious banana oatmeal cookies! Start by preheating the oven to 350ºf/180ºc/gas mark 4.

Step 1: Start by melting the butter.

Step 2: Add the sugar and combine well until the sugar is sort of dissolved.

Step 3: Add the mashed banana to the sugar and butter mixture and combine it well with a fork.

Step 4: Mix in the egg yolk with a fork, so that it is well mixed with the original ingredients.

Step 5: Add the amount of oats or oat and flour you decided upon. Use the fork again tot combine them well, making sure all oats are coated in the batter.

Step 6: Leave to sit for 15 minutes, stir, cover and leave for another 15 minutes while the oven preheats.

Set the batter for your banana oatmeal cookies to one side so it can thicken up

Step 7: Divide the cookie dough into 12 balls and place on a baking sheet (I did not use paper this time, for a crisp edge). I used a measuring spoon to get 12 equal sized cookies.

Step 8: Use a fork to slightly press down on the banana oatmeal cookie balls, so that they are flatter and more rustic in appearance.

Step 9: Bake in your preheated oven at 180/350/gas mark 4 for 12-15 minutes. I remove mine from the oven when the cookies are browning on the edge, but they are still soft to the touch.

Serve Them With…

I love these banana oatmeal cookies plain, as a tasty and healthy treat, but my favorite way to eat them is with some Nutella spread on top to add that little chocolate hit.

S dollop of chocolate spread on the top of the banana oatmeal cookies makes for a tasty sweet treat

It doesn’t have to be much, but it really makes them a touch sweeter and offsets a cup of coffee nicely.
