These easy strawberry truffles are a tasty festive treat, perfect for your valentines’ celebrations. They are so easy to make with cake mix and when coated in sanding sugar we have a lovely strawberry color sparkle too!

Strawberry Cake Mix
I know, I know, I usually make my cakes from scratch, but sometimes you need a quick win, and using a strawberry cake mix is what makes these valentines truffles easy to make!
Cream Cheese
Any brand of cream cheese will do. I like to use full fat variety because it’s richer but use what you have in the fridge.
Sanding Sugar
Not the same as regular sugar, we want sanding sugar for its decorative nature. Pink and red re ideal for Valentines, but you can go any color you like.
Specific Ingredient Amounts
- 13.25 oz box of strawberry cake mix
- 8 oz cream cheese, softened
- Pink and red sanding sugar
Making The Warming Sweet Potato Soup
This is where we go into the actual making process. After an intro sentence, add each step as below, along with accompanying photo if there are any.
Step 1: Heat treat the cake mix by adding it to a medium bowl and heating it in the microwave for 30 second increments, stirring well between each heat session, until it reaches 165ºF internal temperature.
Step 2: In a large bowl, beat the cream cheese until it is light and fluffy.

Step 3: Slowly add the cake mix, a little at a time, beating to incorporate after each addition, until you have a nice smooth dough.

Chill the dough in the refrigerator for 1 hour or until firm but pliable.

Step 4: Line a baking sheet with parchment paper and then add the sanding sugar to 2 separate bowls or plates.
Step 5: Gather dough with a spoon or cookie scoop and roll into 2-inch balls.


Step 6: Roll the balls of dough in the sanding sugar, and then arrange on the lined baking sheet.


Step 7: Transfer the baking sheet full of truffled to the refrigerator and chill them for 1 hour, or until you are ready to serve.
